Baked Tofu Cheesecake

A lovely dessert that’s low in calories but still delicious.


Serves: 8

  • 175g Digestive biscuits or similar, crushed
  • 75g butter or soy margarine, melted
  • 300g silken tofu
  • 50g dried apricots
  • 45ml lemon juice
  • 1/2 tsp lemon zest
  • 45ml concentrated apple juice
  • 1/2 tsp vanilla essence


  1. Preheat the oven to 175C/350F.
  2. In a medium bowl, mix crushed biscuits and melted butter together. Place the mixture on the pie plate and press it firmly to form the crust.
  3. In a blender or food processor, combine the rest of the ingredients. Pour the mixture into the pie mix and bake it in the preheated oven until slightly brown, 20 to 30 minutes.
  4. Remove from the oven to cool. Refrigerate until chilled.
