Fried Udon (Yaki Udon)

Classic Japanese flavours in this simple fried dish, perfect for mid-week meals.


Serves: 1

  • 100g udon noodles
  • 50g lean pork
  • 50g cabbage
  • 1 small carrot
  • 1 leek
  • 1 tbsp vegetable or sunflower oil
  • 5g katsuobushi
  • 1/2tbsp soy sauce
  • 1tsp sake
  • salt and pepper


  1. Drain the boiled noodles well. Cut the pork into 1cm cubes. Cut the cabbage into 2cm strips, and the carrot into fine strips of 2mm x 5cm. Slice the leek diagonally into 5cm widths.
  2. Heat the oil in a frying pan and fry the pork and vegetables. When cooked, add the noodles.
  3. Add A to seaon. Serve on a plate and garnish with katsuobushi.
