Green Salad with Miso Dressing

White miso is a great dairy substitute that works really well in dressings.


Serves: 2

  • 5-6 lettuce leaves
  • 12cm cucumber
  • 1/2 small onion
  • 2 small tomatoes


  • 2 tsp white miso
  • 1 tbsp rice vinegar
  • 2 tbsp vegetable oil


  1. Tear the lettuce into bite size pieces and cut the cucumber and tomato into 1.5-2cm cubes. Thinly slice the onion and place into a bowl of water for 10-15 minutes.
  2. Put <A> into a small bow land mix with a whisk to make the dressing.
  3. Place the salad, including the onions, into a serving bowl and serve with the sauce.
