Japanese Style Pasta

A simple yet delicious variation on an Italian classic. A great way to try out unfamiliar Japanese mushrooms.


Serves: 2

  • 200g spaghetti, cooked
  • 100g enoki mushrooms
  • 100g shimeji mushrooms
  • 6 shiitake mushrooms
  • 1 tbsp white wine
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • salt and pepper
  • 1 tsp butter
  • some chives


  1. Stem all the mushrooms, and finely slice the shiitake.
  2. Heat the olive oil in a frying pan, add the mushrooms and cook slowly on a low heat. When softened, add the white wine, salt and pepper.
  3. Add the cooked spaghetti to the pan and stir-fry it. Once the ingredients are mixed together well, add the soy sauce, swirl around and then add the butter. Serve garnished with chopped chives.
