Mango Jelly

A less than 100 kcal desert!

Ingredients

Serves: 2

  • 1 ripe mango (medium size)
  • 1 tsp kanten agar powder
  • 2 tbsp sugar
  • 200ml water
  • 1 tbsp lemon juice
  • 2 slices lemon

Steps

  1. Peel the mango, cut into small pieces then make into a puree, using a potato masher or a food mixer/processor.
  2. Place the kanten, sugar and water in a saucepan and bring to the boil, stirring constantly. Keep boiling on a medium heat for 1-2 minutes.
  3. Remove the pan from the heat, add the mango puree and lemon juice and mix well. Pour into a shallow container and cool in a fridge until set. Serve with sliced lemon.
