Mentsuyu Dipping Sauce
This recipe makes a basic mentsuyu for dipping noodles. Experiment with ratios to find your perfect combination!
- 200ml soy sauce
- 50ml mirin
- 40g sugar
- 20g katsuobushi bonito flakes
Place all the ingredients in a small saucepan and bring to the boil. Maintain at a medium heat for 2-3 minutes. Don’t cook it for too long as both mirin and sugar burn easily.
