Mentsuyu Dipping Sauce

This recipe makes a basic mentsuyu for dipping noodles. Experiment with ratios to find your perfect combination!


  • 200ml soy sauce
  • 50ml mirin
  • 40g sugar
  • 20g katsuobushi bonito flakes


Place all the ingredients in a small saucepan and bring to the boil. Maintain at a medium heat for 2-3 minutes. Don’t cook it for too long as both mirin and sugar burn easily.


You can also buy ready-made mentsuyu sauce; try your local Japanese/Oriental supermarket.
