Miso Sauce

This is a wonderful sauce, packed with the goodness of miso, that can be used to accompany vegetables, meat or fish. Try simmering some konnyaku (Devil’s Tongue Jelly) in dashi, then coating with miso sauce for a hearty treat.


  • 100g miso
  • 9g sugar
  • 1 tbsp mirin
  • 4-5 tbsp dashi


Mix the miso with the sugar and mirin in a pan over a gentle heat, then simmer down until the mixture thickens. Add the dashi and mix well. Allow to cool.



This sauce can be kept for up to three days if refrigerated. It is usually used hot.
