Quick Simmered Squid

The sauce complements the squid and the spring onion adds a little sharpness in this classis o-tsumami recipe.


Serves: 2

  • 1 squid
  • 1 chopped spring onion
  • 240ml dashi
  • 60ml soy sauce
  • 1.5 tbsp sugar
  • 1 tbsp mirin


  1. Slice the squid into neat round pieces. Mix the sauce ingredients and boil.
  2. Add the squid to the pan and simmer for 5-6 minutes, then remove and drain.
  3. Serve garnished with the chopped spring onion.
