Rainbow Kakomi

Adults’ Bronze Winner sushi by Barry Palmer, from the Original Sushi Competition 2003.

Ingredients

Serves: 2

6 pieces

  • 96g sushi rice
  • 6 sheets nori
  • skin of 1/3 cucumber
  • 9g sanshoku kizami yuba

Steps

  1. Take 12g of sushi rice and mould into a oval shape. Repeat 6 times.
  2. Wrap each of the rice pieces in a nori strip.
  3. Slice the cucumber skin into fine strips.
  4. Cover the rice with a layer of cucumber.
  5. Top with the mixed sanshoku kizami yuba.
