Rice and Mushrooms (Kinoko-gohan)

Nutty and flavoursome.


Serves: 4

  • 450g rice, uncooked
  • 100g each of shimeji, enoki and shiitake mushrooms
  • 600ml dashi
  • 3 tbsp soy sauce
  • 1 tbsp sake
  • 1 tbsp mirin


  1. Remove the firm stems from the shimeji and enoki, and cut the enoki is half. Remove the stems of the shiitake and cut into fine strips. Rinse all of the prepared mushrooms.
  2. Place the rice, dashi, sake, soy sauce, mirin and mushrooms into a rice cooker and cook.
