Rice Porridge (Okayu)

Japan’s equivalent of chicken soup, perfect if you’re feeling under the weather.

Ingredients

Serves: 1

  • 75g rice, uncooked
  • 500ml water
  • pinch of salt

Steps

  1. Place the washed rice and water in a pan without a lid, bring it to the boil, then lower the heat and cook for 5-6 minutes.
  2. Lower the heat further and cook for another 20-25 minutes.
  3. Just before it has finished cooking, add a little salt and cover with a lid. Turn off the heat and leave covered for 5 minutes to steam. Serve immediately.
