Sandwich Tempura

Japan meets the UK in this delicious fried sarnie.

Ingredients

Serves: 2

  • 100g tinned tuna
  • 60g grated cheese
  • 4 slices of bread, crusts cut off
  • 2 sheets nori, cut to just under the size of the bread
  • vegetable oil for deep-frying

<For the batter>

  • 1 egg
  • 100ml cold water
  • 100g plain flour
  • soy sauce
  • grated daikon
  • lemon juice

Steps

  1. Place 50g tuna, 30g cheese and 1 sheet of nori on a slice of bread, leaving a little space at the edge, then cover with another slice of bread. Repeat.
  2. Mix the tempura batter ingredients, moving the chopsticks or spatula to the left and right, rather than stirring with a circular motion.
  3. Heat the oil in a pan to 180C. Dip the sandwiches into the batter and deep fry until browned.
  4. Drain off the oil, cut each sandwich in half, and serve with soy sauce, lemon juice and grated daikon mixed together.
