Simmered Daikon with Pork

Ingredients
Serves: 4
- 1 medium daikon
- 400g pork joint
- 4 tbsp sake
- 500ml water
- 2-3 chives
- 2 tbsp ground sesame seeds
- chilli powder (optional)

- 2 tbsp sugar
- 3 tbsp soy sauce
- 4 tbsp sake
- 2 tbsp mirin
- 1 tsp ground ginger
- 1 tsp ground garlic
Steps
- Cut the pork into bite size pieces, boil for 2-3 minutes and drain. Peel the daikon, slice into 3-4cm widths, then cut each piece in half.
- Heat the water and sake, bring to the boil, and then add the pork and daikon. Cook for 10 minutes on a medium heat, skimming the foam off as it forms.
- Add <A> to the pan and simmer for 30 minutes. Then add the ground sesame seeds and keep simmering until no water remains. Garnish with chives and sprinkle with the chilli powder.
