Simmered Daikon with Pork


Serves: 4

  • 1 medium daikon
  • 400g pork joint
  • 4 tbsp sake
  • 500ml water
  • 2-3 chives
  • 2 tbsp ground sesame seeds
  • chilli powder (optional)


  • 2 tbsp sugar
  • 3 tbsp soy sauce
  • 4 tbsp sake
  • 2 tbsp mirin
  • 1 tsp ground ginger
  • 1 tsp ground garlic


  1. Cut the pork into bite size pieces, boil for 2-3 minutes and drain. Peel the daikon, slice into 3-4cm widths, then cut each piece in half.
  2. Heat the water and sake, bring to the boil, and then add the pork and daikon. Cook for 10 minutes on a medium heat, skimming the foam off as it forms.
  3. Add <A> to the pan and simmer for 30 minutes. Then add the ground sesame seeds and keep simmering until no water remains. Garnish with chives and sprinkle with the chilli powder.
