Soba Noodles with Chicken
This classic dish is a real delight, simple, warming, packed with the goodness of buckwheat.
- 200g soba noodles
- 100g chicken thigh
- 1 spring onion, sliced
- 700ml dashi
- some shichimi or chilli flakes
- Cut the chicken into bite-sized pieces.
- Boil the chicken and dashi together, skimming off any scum that forms during cooking. Cook the noodles separately, according to instructions.
- Place the cooked noodles in two deep bowls, and pour over the dashi and boiled chicken. Garnish with spring onion and sprinkle with shichimi for a little spice.
