Soba Noodles with Chicken

This classic dish is a real delight, simple, warming, packed with the goodness of buckwheat.


Serves: 2

  • 200g soba noodles
  • 100g chicken thigh
  • 1 spring onion, sliced
  • 700ml dashi
  • some shichimi or chilli flakes


  1. Cut the chicken into bite-sized pieces.
  2. Boil the chicken and dashi together, skimming off any scum that forms during cooking. Cook the noodles separately, according to instructions.
  3. Place the cooked noodles in two deep bowls, and pour over the dashi and boiled chicken. Garnish with spring onion and sprinkle with shichimi for a little spice.
