Soy Flavoured Simmered Chips

Why not try your chips with a traditional Japanese twist?


Serves: 2

500g chips, cooked
50ml dashi
1 tbsp sake
2 tbsp sugar
2 tbsp soy sauce
1 tsp chopped ginger
sesame seeds, to garnish


  1. Put the dashi, sake, sugar, soy sauce and finely chopped ginger into a pan and bring to the boil.
  2. Lower the heat, and add the chips. Simmer until the chips absorb the broth, turning caramel brown as they do.
  3. Serve with sesame seeds. Alternatively, try with chopped nori or chilli powder.
