Squid with Sumiso Sauce (Ika no Sumiso-ae)

A beautifully simple way to enjoy the distinctive texture and flavour of squid.


Serves: 2

  • 1.5 tbsp miso
  • 1 tsp sugar
  • 1 tsp rice vinegar
  • 20g wakame seaweed, pre-soaked
  • 60g squid, boiled


  1. Put the miso, sugar and mirin into a small pan and simmer until the mix gets sticky (stir constantly).
  2. Remove from the heat and mix in the vinegar.
  3. Cut the wakame and squid into bite-size pieces and serve with sauce.
