Squid with Sumiso Sauce (Ika no Sumiso-ae)
A beautifully simple way to enjoy the distinctive texture and flavour of squid.
- 1.5 tbsp miso
- 1 tsp sugar
- 1 tsp rice vinegar
- 20g wakame seaweed, pre-soaked
- 60g squid, boiled
- Put the miso, sugar and mirin into a small pan and simmer until the mix gets sticky (stir constantly).
- Remove from the heat and mix in the vinegar.
- Cut the wakame and squid into bite-size pieces and serve with sauce.
