Sushi Nero

Adults’ Finalist sushi by Cara Satmoko, from the Original Sushi Competition 2005.


1 roll (4 pieces)

  • 96g sushi rice
  • 1 sheet nori
  • 5ml squid ink
  • 90g Avruga or Bewga caviar


  1. Mix sushi rice with squid ink evenly.
  2. Place the nori on a bamboo mat and spread 1 over it evenly, leaving 1cm free on the opposite side to you.
  3. Place your thumbs at the back of the mat and lift then, pressing lightly, roll away from you.
  4. Cut into 4 pieces and top with Avruga or Bewga caviar.
