Thinly Fried Omelette (Tamago Yaki)

Find out the secret to making paper thin tamago-yaki!


Serves: 2

  • 2 eggs
  • 1 tsp sake
  • 1 tsp sugar
  • pinch of salt
  • a little oil, for frying


  1. Mix the sugar, sake and salt together. Add to the eggs and beat well.
  2. Heat a pan on medium heat, then add a little oil. Pour in one quarter of the egg mix, tilting the pan to ensure it is evenly covered.
  3. When the surface has cooked, use cooking chopsticks to turn it over, and then cook the reserve side for a few seconds.
  4. Slide onto a plate, and wipe the pan to remove any excess oil.
  5. Repeat the process (including adding oil to the pan) three times until all the egg mixture has been used.
