Udon Noodles with Fried Bean Curd (Kitsune Udon)
- 100g udon noodles
- 20g fried bean curd (1 block)
- 350ml dashi
- 1 spring onion
- some shichimi
- 100ml dashi
- 1 tbsp soy sauce
- 1 tbsp sugar
- Boil the fried bean curd in water for 5 minutes and then drain. Add A and cook until the sauce is reduced to a third.
- Bring the dashi to the boil.
- Put the noodles in a deep bowl and lay the bean curd on top, pour over the dashi, and sprinkle with chopped spring onion and shichimi
