Udon Noodles with Fried Bean Curd (Kitsune Udon)


Serves: 1

  • 100g udon noodles
  • 20g fried bean curd (1 block)
  • 350ml dashi
  • 1 spring onion
  • some shichimi


  • 100ml dashi
  • 1 tbsp soy sauce
  • 1 tbsp sugar


  1. Boil the fried bean curd in water for 5 minutes and then drain. Add A and cook until the sauce is reduced to a third.
  2. Bring the dashi to the boil.
  3. Put the noodles in a deep bowl and lay the bean curd on top, pour over the dashi, and sprinkle with chopped spring onion and shichimi
