Ultimate Katsu Curry with S&B Golden Curry Mix

Rich aromatic curry that could only be made in Japan

Ingredients

Serves: 4

  • Vegetable oil
  • 1onion, finely chopped 1/2 carrot, grated
  • 92g S&B Golden Curry Sauce Mix
  • 4 pork loin steaks or chicken breasts, seasoned
  • 50g plain flour
  • 1egg, beaten
  • 100g panko breadcrumbs
  • Cooked rice and a selection of vegetables to serve

Steps

  1. Heat 1tbsp oil in a large pan, fry the onion and carrot over a medium heat until softened. Add 620ml water, bring to the boil, reduce the heat, simmer for 10 mins.
  2. Remove from the heat, then add the curry sauce mix, in pieces, stir until completely melted. Simmer gently for another 5 mins, stirring constantly.
  3. Lightly coat the seasoned meat with flour, dip in beaten egg and then coat with breadcrumbs.
  4. Heat vegetable oil in a heavy-based pan to 170°C / 340°F. Deep fry the meat for 3-4 mins each side until golden and cooked through. Drain on kitchen paper.
  5. Slice the meat, drizzle with curry sauce, and serve with cooked rice and vegetables.
