Ultimate Teriyaki Chicken with Hakutsuru Hon Mirin

Ingredients

Serves: 2

  • 2 chicken thighs, skin on, cut into pieces
  • 1tbsp cornflour
  • Vegetable oil
  • Freshly cooked rice and vegetables, to serve

For the teriyaki sauce;

  • 4 tbsp Hakutsuru Hon Mirin
  • 4 tbsp soy sauce
  • 2 tbsp sugar

Steps

  1. Place the sauce ingredients in a bowl and mix well.
  2. Lightly coat the chicken pieces with cornflour, then fry in an oiled pan on a medium heat until both sides are crisp and cooked through (approx. 7 min)
  3. Wipe the frying pan with a paper towel. Return to a low heat and add the sauce. Coat the chicken well with the sauce then let it simmer down until thick and glossy. Serve with cooked rice and vegetables.

・Hon mirin (sweet rice seasoning) is a key condiment in Japanese cooking, thanks to its subtle natural sweetness and balanced flavour.

・Unlike cheaper mirin-style condiments, hon mirin (meaning “real mirin”) is a term reserved for a more carefully crafted condiment containing just three ingredients—glutinous rice, rice koji, and alcohol—slowly fermented and matured for an altogether superior product.

・Chicken aside, teriyaki sauce works well with beef and pork as well as fish, particularly salmon and firm-fleshed white fish such as cod and haddock. Teriyaki sauce is also delicious with tofu and other plant-based proteins. Hon mirin works to mask the odour of raw fish so is particularly recommended for fish
