Wakame Salad

An unusual mix of ocean and fruit flavours
Ingredients
Serves: 4
- 2g dried wakame
- 1 cucumber
- 150g can mandarin slices
- 3 tbsp rice vinegar
- 1 tbsp sugar
- salt to taste
- white sesame seeds to garnish
Steps
- Reconstitute the dried wakame in water, then drain. Wash and thinly slice the cucumber. Sprinkle the slices with salt to soften, then rinse in water and drain.
- Mix the wakame, cucumber and mandarin slices together.
- Mix the vinegar with the sugar and 1/3 tsp of salt. Pour over the salad and garnish with sesame seeds.
