Wakame Seaweed with Sweet Vinegar

Simple and healthy, with energy-boosting vinegar.
Ingredients
Serves: 4
- 200g cucumber
- pinch of salt
- 3g dried wakame
- 3 tbsp rice vinegar
- 1 tbsp sugar
- pinch of salt
- toasted sesame seeds, to garnish
Steps
- Soak the wakame in water for 5 minutes to reconstitute. Drain and cut into bite size pieces.
- Cut the cucumber in half lengthways and slice thinly. Rub a pinch of salt onto the slices and squeeze the excess water out with your hands.
- Mix the rice vinegar, sugar and salt in a bowl, add the wakame and cucumber and mix lightly.
- Serve in individual bowls and garnish with sesame seeds.
