Wakame Seaweed with Sweet Vinegar

Simple and healthy, with energy-boosting vinegar.


Serves: 4

  • 200g cucumber
  • pinch of salt
  • 3g dried wakame
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • pinch of salt
  • toasted sesame seeds, to garnish


  1. Soak the wakame in water for 5 minutes to reconstitute. Drain and cut into bite size pieces.
  2. Cut the cucumber in half lengthways and slice thinly. Rub a pinch of salt onto the slices and squeeze the excess water out with your hands.
  3. Mix the rice vinegar, sugar and salt in a bowl, add the wakame and cucumber and mix lightly.
  4. Serve in individual bowls and garnish with sesame seeds.
