Nerikiri Wagashi is a type of traditional Japanese confectionery made from sweet white bean paste, sugar, and rice flour. Soft and delicate, it is often handcrafted and sculpted into beautiful seasonal shapes like flowers and leaves, reflecting nature and Japanese aesthetics. Typically enjoyed with matcha tea, it is also served at the special occasion welcoming guests.  

Based in London, Mutsumi is a passionate instructor who shares the art of Wagashi through her blog and workshops. With a special love for the intricate beauty of Nerikiri Wagashi, she is excited to share her expertise with you.  

What You Will Learn 

Join us for a hands-on workshop where you’ll master the art of decorating and crafting your own beautiful Nerikiri wagashi! On the 18th and 19th, get creative by bringing iconic designs to life! You can choose either (or both!) shape delicate Sakura (cherry blossom) and an adorable cat, and Himawari (sunflower), and the beloved Totoro into sweet, edible creations. 

What You Can Bring Home  

Take home your beautifully crafted Nerikiri sweets along with the skills and confidence to recreate them anytime.

Please bring a clean towel as you will need to wash your hands before attending the class.

Special Notes:

* Suitable for beginners from 10 years old.
* The sweets we are going to make in this class are all vegan and gluten-free. (Although no ingredients with known allergy sources are used, it will be prepared in the kitchen where all kinds of food are cooked and not guaranteed to be completely allergy-free).
* You will need a separate HYPER JAPAN Festival 2025 ticket for the same date.

Mutsumi has been a food enthusiast since she was young with a particular interest in baking. ‘Wagashi’ Japanese confectionary making was a natural development of combining sweets making and artistic craft. She loves all sorts of Wagashi but is particularly fascinated with the beauty and finest details of Nerikiri confectionary.

She runs popular Japanese sweet-making workshops and provides bespoke Wagashi for private orders for all sorts of events.
